1/3 c uncooked white rice
1/3 c sugar
1 qt. milk
1/2 tsp. salt
1 tsp. vanilla
1/2 c light cream
grated lemon rind
seedless raisins

Directions:
Directions:
Combine rice with milk, sugar, salt and vanilla in a 1 1/2 qt. casserole. Bake in a slow oven 325 degrees for 1 1/2 hours, stirring occasionally. Add light cream and bake an additional 1/2 hour without stirring. Cool until pudding has a creamy consistency. Add in grated lemon rind and seedless raisins as a flavor variation.
