4 skinless, boneless chicken breast, trimmed of fat
1 Tbs vegetable oil
salt and pepper to taste
1 onion, chopped (about 1 cup)
3 firm pears, peeled, cored and diced
1/2 cup fresh cranberries
1/4 tsp cinnamon
1/4 tsp ginger

In a large non-stick skillet, over medium heat, heat 1 1/2 tsp oil. Sprinkle chicken breast lightly with salt and pepper. Brown in oil about 2 minutes per side. Remove from pan and reserve. Add the remaining oil to the skillet and cook the onions until softened, about 4 minutes. Add pears, cranberries, cinnamon and ginger. Stir to combine well. Place chicken on top of fruit mixture. Cover and simmer 10 to 12 minutes or until cooked through.
