Salad:
1 zucchini (about 1 pound)
2 carrots, peeled
3 scallions with green tops, chopped
salt and pepper to taste

Dressing:
2 Tbs lemon juice
1/2 cup olive oil
1 tsp sugar
1/8 tsp curry powder or to taste
salt and pepper to taste

Directions:
Directions:
Curry dressing: In a small bowl, whisk olive oil into the lemon juice. Add the curry powder, sugar, salt and pepper to taste.
Salad: Grate the zucchini and carrots into a bowl. Add the scallions. Toss with curry dressing. Salt and pepper to taste. Chill Serves 4.
