1 cup peeled, seeded and diced cucumber
1/4 cup sliced scallions, green portions only
1/4 cup vegetable oil
1 Tbs lemon juice
1 tsp dill weed
1/2 tsp salt
dash of ground black pepper

Directions:
Directions:
Place all ingredients in an electric blender and puree on high speed about 10 seconds. Stop blender and scrape down sides if needed. Serve over sliced tomatoes, salad greens, etc. Yields about 1 cup.
