Crust:
1 cup flour
2 Tbs sugar
1 tsp baking powder
1/2 tsp salt
3/4 cup water
2/3 cup solid vegetable shortening
1 egg

Filling
1 can (1 lb 5 oz) apple pie filling
1 Tbs lemon juice
1/2 tsp apple pie spice or cinnamon

Alternate Filling I
1 can (1 lb) pumpkin
3/4 cup sugar
1/2 tsp salt
1/2 tsp cinnamon
1 can (5 1/3 oz) or 2/3 cup evaporated milk
1 egg

Alternate Filling II
1 can (1 lb 5 oz) mincemeat pie filling
1 Tbs lemon juice
1/2 tsp cinnamon

Alternate Filling III
1 can (1 lb 5 oz) cherry pie filling
1 tsp almond extract

Directions:
Directions:
Heat oven to 425F
Crust:
In a small mixing bowl, combine flour sugar, baking powder, salt, water, shortening and egg. Blend well at lowest speed; beat 2 minutes at medium speed. Spread batter in 10" or 9" deep dish pie pan.
Filling:
Combine all ingredients in a mixing bowl. Carefully spoon filling into the center of the batter. Do not stir. Bake at 425F for 40 to 45 minutes until crust is golden brown.
For Pumpkin Filling: Put all ingredients in a bowl and beat until well blended with a rotary beater.
For Mincemeat Filling: Put all ingredients in a bowl and stir until well blended.
For Cherry filling: Put all ingredients in a bowl and stir until well blended.
