2 Cornish Hens (1 3/4 lb. each)
1 Bunch Of Fresh Thyme
1 Lemon, Halved
1 Bunch (Packed) Coarsely Chopped Fresh Italian Parsley
3 T. Butter
Salt
Pepper

Directions:
Directions:
Preheat over to 450. Place hens in roasting pan breast side up. Place thyme and 1 lemon half in the cavity of each hen. Loosen skin from breast and pack remaining thyme and parsley under. Squeeze lemon over hens. Rub butter all over hens. Season generously with salt and pepper. Roast hens, rotating pan halfway through, until skin turns golden brown and an instant read thermometer registers 180 degrees. About 50-60 minutes. Let stand 10 minutes. Cut hens in half lengthwise. Serve with lemon wedges.
