3/4 C. White Sugar
1/3 C. Flour
1/4 tsp Salt
2 C. Milk
3 Egg Yolk, Beaten
2 T. Butter
1 1/4 tsp. Vanilla Extract
1 (9-inch) Pie Crust, Baked
4 Bananas, Sliced

Preheat oven to 350. In a sauce pan combine sugar, flour and salt. Gradually stir milk in. Cook over medium heat, stirring constantly, until mixture is bubbly. Keep stirring and cook for about 2 minutes. Remove from heat. Stir a small quantity of the hot mixture into the beaten egg yolk, and immediately add the egg yolk mixture to the rest of the hot mixture. Cook for 2 minutes, keep stirring. Remove from stove, add butter and vanilla. Stir until the whole thing has a smooth consistency. Slice bananas into the cooled baked pastry shell. Top with pudding mixture. Bake for 12-15 minutes. Chill for 1 hour.
