4-5 Cooked chicken breast, shredded
1 can evaporated milk
1 can of cream of mushroom soup
1 can of cream of chicken soup
1 green pepper and 1 onion to taste
1 bag of nacho cheese Doritos
1 can of rotel tomatoes
2 cups of shredded cheese (fiesta blend)
1 cup of rice

Directions:
Directions:
1. Mix chicken, evaporated milk, both soups, and tomatoes in a bowl.
2. Spray 9x13 pan with cooking spray.
3. Crunch up 1/2 bag of chips and place at bottom of pan.
4. Place chicken mixture over chips. Sprinkle cheese over the top.
5. Bake at 350 for 30-40 minutes.
6. While chicken is baking- cook 1 cup of rice.
7. Place rice on a plate and spoon chicken mixture over rice.
