2 lbs. ground chuck
1 medium onion, chopped
1 cup water
10 corn tortillas
1 pkg. frozen chopped spinach, thawed and drained
1 pkg. taco seasoning
1 cups sour cream
1 bottle taco sauce (12 oz)
3 cups grated Monterey jack cheese
Black olives, sliced
Green onions, sliced

Directions:
Directions:
Combine beef and onions in large skillet brown, stirring meat to crumble. Salt to taste, about tsp, and stir in taco seasoning mix and water. Cover and simmer 10 minutes.
In a sprayed 13 x 9 x 2 baking dish, place five quartered tortillas coated with taco sauce, overlapping in two rows. In a wire strainer, press out most of water from spinach. Stir the spinach into meat mixture. Spoon half of beef-spinach mixture over the tortillas in the casserole and sprinkle with half the cheese. Cover with remaining tortillas coated with taco sauce and spread the balance of the taco meat mixture on the tortillas. Spread the chopped pork or ham evenly over the tortillas meat mixture, and then spread on the sour cream. Top with remaining cheese. Refrigerate several hours or overnight. When ready to cook, take out of refrigerator early enough so it is at room temperature before baking. Bake 375 for 50 minutes covered for the first 30 minutes. Before serving, garnish with sliced olives and sliced green onions. You can also put this in two 8 square pans; fix one and freeze one until later.
