cup sugar
1/3 cup vegetable oil
2 eggs
1 cup mashed bananas (about 2 large bananas)
teaspoon grated lemon rind or lemon juice
1 cups all-purpose flour
teaspoon baking soda
teaspoon salt

Directions:
Directions:
Heat oven to 325. Beat together sugar, oil, and eggs. Stir in mashed bananas and lemon rind. Sift together flour, baking soda, and salt. Add to banana mixture. Stir until combined. Pour into well-greased 9x5x3 loaf pan. Bake for 50-60 minutes. Remove from pan and cool on rack.

For a yummy twist try adding a little cinnamon and nutmeg, or a spoonful of sour cream and chocolate chips! If you don't have enough banana, use applesauce to make up the difference. I also add oats and ground flax seed.
