cup butter (do not melt)
1 egg
teaspoon vanilla
1 cup brown sugar
2 cups flour
1 teaspoon baking soda
1 cup milk

Directions:
Directions:
Cream butter and milk with a mixer. Add the rest of the ingredients. Mix. (Batter will have butter chips, but do not melt the butter.) Put in muffin tin. Bake at 375 for 15 minutes. Makes 12 muffins. Mary Ann's Note: You can substitute applesauce for 1/2 of butter and part of sugar, and you can use whole wheat flour.

I don't know where this recipe was originally from. My mom used it when we were kids, and it has always been a favorite.
