-1/2 lb. of the following cheeses: sharp cheddar, Swiss cheese, smoked Gouda, or plain Gouda
-3/4-1 cup light or real mayonnaise
-1 jar pimientos, drained
-1-2 tbsp. Crazy Jane's Mixed-Up Salt or garlic salt and black pepper

Using a food chopper, grate the cheeses until they are in the shape of small, pea-sized balls. Place the cheese in a medium sized bowl, and add the mayo and pimientos. Mix well, adding more mayo as needed for a creamy, spreadable texture. Lastly, add the spices, and adjust them to taste.

This pimiento cheese is unlike typical southern pimiento cheese since it uses finer cheeses than American! It is rich, and I have always thought it best on either water crackers, cocktail rye, or toast. You can actually use any combination of hard cheeses you have to make it and guests always love it!
