"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
This recipe for Pork Roast and Sauerkraut in the crock pot, by Jan Smith, is from Yummy Family Favorites,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
1 4-5 lb pork loin roast ( I usually use boneless) 3-4 cloves garlic 2 bags sauerkraut with liquid 1 bottle of beer 1 medium jar of natural applesauce- no sugar added brown sugar to taste ( color) - probably about a cup
Make slits in pork roast and insert garlic cloves. Place roast in crock pot. Cover with other ingredients. Cook on low for 6-8 hours or high for 4 hours until meat is falling apart. Serve over/with mashed potatoes.
