6 corn tortillas* (cut into small bite sizes)
4 eggs
1/2 c. salsa (homemade, Pace, or any store bought salsa)
1/2 c. cheese (Colby, mozzarella or cheddar)

Directions:
Directions:
Fry cut up tortillas in oil (not too much), once brown and crispy, add the eggs and mix well until eggs are fully cooked. Add salsa and mix well. Top with cheese & enjoy. Great with refried beans.

(This recipe can be cut down to 3 tortillas and 2 eggs. 1/4 cup salsa and cheese.

* You can also use corn chips (Fritos or Tortilla chips..... take 2 or 3 handfuls and break up before frying).
