2 quarts strawberries 11/2 cup sugar 2 Tbsp. Gelatin 1 cup cold water 4 Tbsp. Lemon juice 2 cups heavy crème, must be whipped in advance
Mix strawberries with sugar. (There should not be juice with the strawberries. If you strain the strawberries, then use the juice in place of cold water. Let stand until the sugar dissolves. Sprinkle gelatin over cold water or juice. Let stand 5 minutes. Then heat until the gelatin dissolves. Add the gelatin and lemon juice to the berry mixture. Fold in the cream, which has already been whipped. Pour into cups and chill until set.
