2 envelopes unflavored gelatin
1/2 cup cold water
6 egg yolks
11/3 cup sugar (use one cup first)
1/2 cup lemon juice
2 tsp. Grated lemon peel
2 cups heavy whipping cream
2 egg whites

Directions:
Directions:
In a metal measuring cup, sprinkle the gelatin over the cold water. Let soften for 2-3 minutes. Then set the cup into a pan of simmering water, still until dissolves. Remove pan from heat, but leave the cup in the water. Beat the egg yolks with 1cup sugar till thick. Add the dissolved gelatin, the lemon juice and peel. Whip the cream until firm. With a spatula, gently fold the whipped cream into the egg mixture. Don't stir. In a separate bowl with clean beaters, beat the egg whites until frothy. Sprinkle in the remaining 1/3cup of sugar and continue beating until stiff. Gently fold the egg whites into the lemon mixture/crème mixture. Fold until no trace of the whites can be seen. Spoon into dishes or cups. Cover with wrap and refrigerate for 3 hours.
