4 TBL butter
3TBL flour
1 ˝ cups milk
Pinch of nutmeg
Salt and white pepper to taste

Directions:
Directions:
Melt the butter in a heavy sauce pan and add the flour and cook over low heat about 3 minutes. Slowly stir in the milk and raise the heat to medium. Stir constantly until the sauce thickens, add the salt, pepper and nutmeg.

This can be the base for almost any thing that needs a cream sauce. Biscuits and Gravy, chip beef on toast, creamed soups, creamed peas and pearl onions, simple creamed spinach. Note the cheese sauce in this book, same start, added onions etc.
