1 c. + 2 tbsp. light brown sugar 3/4 c. butter, softened 2 eggs 1 tsp. vanilla 1 c. whole wheat flour 1/4 c. wheat germ 1 tbsp. baking powder 1/2 tsp. baking soda 1/2 tsp. salt 2 1/2 c. quick oats 6 oz. chocolate chips (1/2 pkg.)
Preheat oven to 350º. Cream together brown sugar, softened butter, eggs, and vanilla. In a small bowl, whisk together flour, wheat germ, baking powder, soda, and salt. Add dry ingredients to creamed mixture. Stir in oats and chocolate chips. Drop by teaspoons onto a parchment-lined baking sheet. Bake 8-10 minutes. Makes about 2 doz. cookies.
I use this recipe after discussing "Make half your grains whole." The students love these cookies. We also make quick breads using whole grains.
