1/3 cup balsamic vinegar
1 tablespoon minced shallot
1 teaspoon chopped capers
1 teaspoon Dijon mustard
2/3 cup olive oil
salt
freshly ground pepper

Directions:
Directions:
Combine vinegar, shallots, capers and mustard in a food processor until smooth. With processor running, gradually add oil in a slow, steady stream. Season to taste with salt and pepper.
