6 eggs
2 cups milk
1 tsp. salt
6 Tbsp. Melted butter or margarine
1 1/2 cups sifted all purpose flour
1/2 cup unsifted whole wheat flour
8 6-ounce custard or pottery cups ( These are larger than most custard cups.)

Directions:
Directions:
Butter the custard cups very generously. Place on jelly roll pan and distribute so there is space around each one. Preheat oven to 400 degrees. Beat eggs until foamy at medium speed with mixer, about 2 minutes. At low speed add milk, salt, butter and beat well. Then gradually beat in all-purpose flour and whole wheat flour until smooth. Divide among custard cups.

Bake 60 minutes, then pull out oven rack part way and, with a paring knife, quickly cut small slit in side of each popover to let out the steam. Bake 5 to 10 minutes more until brown. Remove promptly when done and serve hot with butter, jam or jelly. Makes 8.
