(Grandma would make this with mushrooms that grandpa would dry, although it can also be made with fresh mushrooms)

4 ounces dried mushrooms and 4 cups warm water. In a medium bowl, place mushrooms and water. Cover with plastic and let soak overnight. The next day, remove the mushrooms from the soaking liquid without disturbing the sediment at the bottom and chop them into small pieces.

1/4 cup oil (or butter); 1/4 cup all-purpose flour - In a saucepan, cook oil and flour until flour is lightly browned.

In stock pot, brown 2 large diced onions in 2 tbsp oil. Add 8 cups water, mushroom soaking liquid (strain sediment), mushrooms, salt and black pepper to taste. Simmer 1-2 hours or till mushrooms are tender. Stir in sauerkraut juice and browned flour to thicken.

*To make with fresh mushrooms: Saute several packages of sliced fresh mushrooms in 1-2 tbsp oil till browned, then follow directions as above...
