2-5 c. cider vinegar
2-5 c. sugar

Directions:
Directions:
Wash beets and cover with boiling water. Cook until tender. Drain. As soon as you can handle them, remove skins and slice. Pack into pints or quart jars.
For pickling syrup, heat (equal number of cups) vinegar and sugar to boiling. (Amount depends on number of pints or quarts you are making.) Cover beets with boiling syrup. Process in hot water bath for 30 minutes.
