Ingredients:  
1 small red onion,
juice of 2-3 limes,
1/2 pond feta cheese,
4 cups watermelon,
1/2 cup pitted oil-cured black olives,
1 cup whole flat leaf parsley leaves,
1/4 cup chopped mint,
3 Tablespoon extra virgin olive oil.
1/8 teaspoon fresh ground black pepper

Directions:
Directions:
Cut the red onion into thin half moon slices, place in a bowl with the lime juice. Cut the feta into 1 inch cubes, cut the watermelon into 1 inch cubes and place in a bowl with the olives, parsley, mint, olive oil and pepper. Add the onion and lime juice mixture and toss gently to combine.
