4 tbsp. flour
1 c.sugar
1/4 tsp. salt
1 c. milk
1 1/2 tsp. grated lemon rind
4 tbsp. lemon juice
2 egg yolks (well beaten)
2 egg whites (stiffly beaten)

Directions:
Directions:
Preheat oven to 350. Mix flour, sugar and salt. Stir in grated lemon rind and lemon juice, egg yolks and milk. Fold in egg whites. Pour into deep dish and set in pan of hot water 2" deep. Bake for 30 to 35 minutes. Serve warm or cold, with or without whipped cream.
