2 c. whole wheat flour
1 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. brown sugar
2 eggs
1/2 c. vegetable oil
1/2 tsp. vanilla extract
1 1/2 c. fresh or frozen blueberries
1 tbsp. grated lemon peel
coarse sugar

Directions:
Directions:
Preheat your oven to 350. Sift flour, baking powder, cinnamon and salt together. In a separate bowl, mix the remaining ingredients by hand. Add the flour mixture and gently mix well by hand. Spoon the mixture into muffin cups in a standard muffin tin, and sprinkle the tops of each muffin with coarse sugar. Bake for 20 to 25 minutes. Muffin is done when a toothpick inserted into it comes out clean.
