Catharine Ledbetter's Spaghetti Sauce (page 176)
10 ounce package lasagna noodles
3 cups cottage cheese
2 Tablespoons parsley flakes
2 beaten eggs
2 teaspoons salt
1/2 teaspoon pepper
3/4 cup fresh grated Parmesan cheese
1 pound shredded mozzarella cheese

Directions:
Directions:
Prepare spaghetti sauce and cook noodles. Combine cottage cheese, eggs, seasonings, and Parmesan cheese. In a 13 x 9 x 2 baking dish, layer lasagna noodles, cheese, mozzarella, and meat sauce, ending with mozzarella cheese on top. Place dish on a baking sheet and bake covered with foil at 375 for 40 minutes, then uncover for 5 to 10 minutes to brown on top. Let stand 15 minutes before cutting.
