1 cup granulated sugar
1 cup packed brown sugar
1 cup shortening
2 eggs
1 teaspoon vanilla
2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 cups quick cooking oatmeal
2 cups orange slice candy (cut into small pieces)
1 cup flaked coconut

Directions:
Directions:
I n large mixer bowl cream together sugars and shortening until fluffy. Add eggs and vanilla. Beat well. Sift together flour, baking powder, baking soda and salt. Stir until creamed mixture. Mix in oats, candy and coconut. Use about 1 tablespoon mixture for each cookie. Roll into about a 1 inch ball and place on greased cookie sheet. Bake in 350 degree oven for 10-12 minutes or until lightly browned. Remove and cool on wire rack.

This is a very stiff batter. Use a good mixer. Also, you might want to spray your hands with cooking spray before rolling out these cookies. It will help.
