Dash of olive oil or 1 serving spray of olive oil spray
1 small onion
16 oz. vegetarian ground meat substitute.
1 (14.5 oz) can pinto beans
1 (14.5 oz) can red kidney beans
1 (14.5 oz) can diced tomatoes
1 T. garlic powder
4 T. Chili powder-add more to taste
2 T. Cumin-add more to taste
Veggie broth or water

Directions:
Directions:
Put oil or sprays oil into medium sauce pan over medium heat. Add onion and saute approx. 3-4 minutes. Add meat substitute, beans, and tomatoes. Stir together. Pour veggie broth or water into 14.5 oz can of tomatoes. Mix into ingredients. Simmer until hot, approx. 20 minutes. Add more water, broth as needed.

You can find meat substitute in the frozen section. I recommend boca ground or quorn meat substitute. You can also add your favorite veggies to this pot of chili for extra nutrients. My favorite additions are zucchini and mushrooms.
