1 lb. country style pork ribs
1/4 tsp. each salt and pepper
1 T. olive oil
1 c. instant brown or white rice
1 sm. onion, sliced
1/2 bell pepper, sliced
1 c. fresh herbs: parsley, oregano, basil, chopped
3 sprigs fresh rosemary
1 c. water

Directions:
Directions:
Salt and pepper ribs. Brown, save drippings. Put rice on bottom of a greased baking dish. Place onion and bell pepper on top of rice, then add ribs. Spread herbs on top of ribs and add one cup of water and one-half cup of drippings. Cover dish tightly with foil and bake in preheated 350º oven for one hour.
