20 Jumbo Pasta Shells, 2 tsp. Olive Oil, 1/2 lb. fresh Spinach, 2 cloves Garlic, 1/2 lb. Ricotta Cheese, 1/2 lb. Mozzarella Cheese, 1 Egg slightly beaten, 1 T. fresh basil leaves finely minced, Salt & Pepper, 3 cups Pasta Sauce, 1 cup grated Parmesan Cheese

Put spinach in a pan with a bit of water, cover and cook over low heat until leaves are just wilted. Drain water from spinach and chop finely. In a large mixing bowl, mix together the spinach, garlic, ricotta, mozzarella, egg, basil, salt and pepper to make the filling. Cook the pasta shells. Fill the pasta shells with the filling. Spread a small amout of pasta sauce into the bottom of a large baking pan. Put shells on top of sauce. Pour remaing suace over and around the shells. Top with parmesan cheese. Cover with foil and bake about 35 minutes ar 375.

For the pasta sauce I make my own by sauting 1 onion chopped with 3 cloves garlic in 2 T. olive oil. Add 2-15 oz. cans of Diced Tomatoes. 1 small can Tomato Paste and 1 T. basil. Add Salt & pepper to taste. If too thick you can add a small amount of water to thin out.
