1-cup self-raising flour
1 tablespoon cocoa
˝ cup sugar
1 cup coconut
113g (1/4lb) butter or margarine
Chocolate icing

Directions:
Directions:
Sift 1-cup self-raising flour and 1 tablespoon cocoa; add ˝ cup sugar, 1 cup coconut. Melt 113g (1/4 lb) butter or margarine , and pour over dry ingredients. Mix well. Press evenly into buttered tray Bake in moderate oven 20 to 30 minutes. Ice with chocolate icing and sprinkle coconut over. Cut into squares. Enjoy!

Aunty Mary Deguara gave me the Presbyterian Women’s Missionary Union Cookbook as part of a kitchen tea gift 33 years ago. Looking through this little red “encyclopaedia’’ of recipes I remember feeling a bit daunted by the pages and pages of simple, but interesting ways of preparing food. Over the years my “little mate’’ has helped me out countless times to feed my family and many others – even consulting her last week to make pea and ham soup. The chocolate coconut biscuits I want to share with you have saved me on many occasions, for example – unexpected visitors and kids needing “a plate for school in the morning’’. This is how all of the recipes are written in the book.
