2 c. water
1 c. white rice
6 T. olive oil
2 T. fresh lemon juice
1 tsp. dried oregano
1/2 tsp. Dijon mustard
2 large tomatoes, diced (about 2 cups)
1/4 c. Feta cheese, crumbled
3/4 c. black olives (optional)
1/4 c. fresh parsley
Salt and pepper to taste

In a 2-qt. saucepan, bring water to boil. Add rice, stir, cover and reduce heat; cook 15-20 minutes or until all water is absorbed. Remove from heat and let stand, covered, 5 minutes.

While rice is cookking, prepare marinade: Whisk together the oil, lemon juice, oregano, mustard, salt and pepper. Mix in the tomatoes, feta, olives and parsley. Place rice in serving bowl. Drain marinade over the hot rice, toss and let cool slightly. Add the rest of the ingredients, toss, adjust seasonings. Serve lukewarm or refrigerate until 30 minutes before serving.
