1/2 c. each granulated sugar and packed dark brown sugar.
1 tbsp. flour
1 1/2 tsp. cinnamon
1/2 tsp. each ground nutmeg and salt
1/4 tsp. ground ginger
1 can (15 oz.) pumpkin
1 can (12 oz.) evaporated milk
2 large eggs, beaten to blend
10-inch pie pastry
Walnut Streusel

Directions:
Directions:
Preheat oven to 375 degrees.
In a bowl, mix sugars, flour, and spices.
Add pumpkin, milk, and eggs; whisk until well blended. Pour mixture into pie pastry and sprinkle evenly with streusel.

Bake pie on bottom rack of oven until a knife inserted in center comes out clean, 60 to 65 minutes. Let cool on a rack, 2 hours.

Walnut Streusel:

In a bowl, combine 1/2 c. packed light or dark brown sugar, 1/2 c. rolled oats, 1/2 c. chopped walnuts, 1/4 cup all-purpose flour, 1/4 c. butter, and 1/2 tsp each cinnamon and ground nutmeg. Mix until crumbly. Makes about 2 cups.

This is a nice change from the usual pumpkin pie.
I use Pillsbury pie crusts, in refrigerated section of grocery store.
