1 egg plant( medium)
1 medium onion,diced fine
1 c.Ritz cracker crumbs
1/2 c. grated cheddar cheese
1 can mushroom soup

Directions:
Directions:
Peel eggplant and dice onion. Cook together till tender,
10 to 12 minutes. Drain. In greased casserole,
put layer of eggplant, crackers, cheese and mushroom soup. Repeat, and bake at 350 degrees for 45 minutes.
