1 medium eggplant
1 egg
1 tbsp. water
3 tbsp. oil
1/4 cup flour or bread crumbs
2 cups (or more) spaghetti sauce
1 cup mozzarella cheese - sliced
Parmesan cheese (if desired)

Directions:
Directions:
Peel eggplant if desired and slice into 1/2 inch slices. Beat egg and water. Dip slices into egg mixture and then into flour or crumbs. Heat oil in skillet. Brown eggplant on both sides. Layer eggplant in a 9X13 inch greased dish. Cover each layer with sauce. Top with cheese. Bake at 350 for about 25 minutes or until sauce is bubbly.
