6 cups sliced potatoes 3 tablespoons onion finely minced (optional) 3 tablespoons butter 3 tablespoons flour 1/2 tsp. salt 1/4 tsp. pepper 1-1/2 cup milk 1-1/4 cup grated American or mild cheddar cheese
Arrange half of the potatoes in a butter large casserole dish, cover with layer of minced onion. Pour about 1/2 cup of cheese sauce over this layer. Top with remaining potatoes and pour remaining cheese sauce over the casserole.
