2 lbs. raw shrimp
2 tbsp. oil
2 tbsp. flour
3 cups okra - chopped
2 onions - chopped
2 tbsp. oil
1 can - (1 lb. 13 oz.) tomatoes
2 quarts water
1 bay leaf
1 tsp. salt
1 clove garlic
dash of red pepper

Directions:
Directions:
Peel the raw shrimp and devein. Make roux of 2 tbsp. oil and 2 tbsp. flour. Add shrimp to this for a few minutes, stirring constantly. Set aside. Saute okra and onions in 2 tbsp. of oil. Cover and cook over low heat for a few minutes until the okra is tender. Add tomatoes, water, and seasoning. Add shrimp and roux to this. Cover and cook slowly for 30 minutes.
Ham or Italian Sausage can also be added.
