1 c. flour
1 egg
1/2 tsp. salt
2 Tbsp. cream or canned milk

Directions:
Directions:
Beat the egg slightly and add cream. Stir in flour and salt. There should be enough flour to make a stiff dough. Adjust the amount of flour accordingly. ( I always have the dough a little sticker, the noodles are better if they don't have too much flour in them). Roll out as thin as possible. Cut in thin strips and drop into soup. If the dough is to sticky I always shift flour over the rolled out noodles before cutting them. Simmer in soup until tender. ( I usually cut with a pizza cutter.)

I always 6 or 8 times this recipe for a crowd. This is a family favorite for Thanksgiving. I boil a whole chicken so it has a rich broth, if the soup is not rich enough add a can of chicken broth. Add vegetables, if desired.
We make this a lot in winter, on those cold nights.
