1/4 stick of butter
1 med onion, chopped
3 stalks of celery, chopped
1 tsp. sage
1 tsp. thyme
1 tsp. parsley
2 c. cooked rice
6 oz jar green olives w/ pimentos, sliced
1 3 to 4 lb speckled trout

Directions:
Directions:
Place fish on baking sheet covering fins with foil.

Melt butter and saute onions and celery. Add rest of ingredients, stir.

Stuff fish with mix. Salt and pepper. Bake at 350 for 30 to 45 minutes.

If head is left on, replace eye with olive.

If you remove skin, make scales with more sliced olives and gills with pimentos.
