Pizza Breadsticks Recipe

1 1/2 tsp. active dry yeast
1/2 c. warm water (105-115 F)
1 1/4 c. all-purpose flour
1/4 c. shredded mozzarella cheese
1/4 c. shredded Italian cheese
1/4 c. chopped red or green bell pepper
1 green onion, sliced
1 medium clove garlic, minced
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. red pepper flakes (optional)
1 1/2 tsp. olive oil
2 T. melted butter
1/4 c. Italian cheese for topping

Directions:
1. Preheat oven to 400 F. Spray large baking sheet with nonstick cooking spray.
2. Sprinkle yeast over warm water in small bowl; stir until yeast dissolves. Let stand 5 min or until bubbly.
3. Meanwhile, place flour, cheeses, pepper, onion, garlic, basil, oregano, salt and pepper flakes in food processor; process a few seconds to combine, but keep the colorful ingredients "chunkier" for more color in the final product.
4. Add the yeast mixture and olive oil. Process just until mixture forms a ball. Add an additional 2 T. flour if dough is too sticky.
5. Transfer dough to a lightly floured surface; knead 1 min. Let dough rest 5 min.
6. Roll out dough with a lightly floured rolling pin to form an 8" x 8" square; cut dough into 1" strips.
7. Twist dough strips to form a spiral; place on prepared baking sheet.
8. Brush the tops of each breadstick with melted butter and bake 10-12 min.
9. Remove from oven and top each breadstick with shredded cheese and salt; bake an additional 2 min or until lightly brown.

Yield: 4 servings

Introduces students to yeast, vegetables incorporated into breads, olive oil, and topping a product in the last min of preparation. Students think it's delicious and goes well with our Chicken and Wild Rice Soup recipe.
