2 1/2 c. blueberries, fresh or frozen
1 c. sugar
1/4 c. flour
Dash of salt
1 T. lemon juice
2 T. butter

Directions:
Directions:
Mix lemon juice with blueberries in mixing bowl; then stir in dry mixture of sugar, flour and salt. Transfer to rolled-out pie pastry in 9" pan. Dot with butter. Rub edges of bottom crust with water to seal when adding top crust to hold in juices. Roll out top crust; cut slits, and then transfer to cover blueberry filling. Seal top crust to bottom; flute edges, and bake in 400 oven for 45 - 50 minutes.

As I don't usually keep lemons, I have RealLemon in the fridge made from concentrate, and I use this. Blueberries are too sweet for pie, we think, without the lemon juice for tartness. That makes it just perfect!

We just really like blueberries, and they're always listed on the list of top nutritious foods. We eat the frozen ones for breakfast all year. Just a minute or two in microwave on low power, a bit of sugar, and add to cereal or eat by themselves.
