2 deep dish pie crusts
1 bag frozen broccoli
1 lb bag of shredded cheddar cheese
2 cups of cubed or deli sliced ham
6 eggs
3 cups of milk
salt and pepper to taste

Directions:
Directions:
Preheat oven to 350. You'll need a cookie sheet under the pies to catch any spills. Pour equal amounts of broccoli into pie shells. Put equal amounts of ham in pies over broccoli. Sprinkle equal amounts of cheese over ham and broccoli. In a bowl, whip eggs and milk together. Pour equal amounts of liquid into each pie leaving room for rising. Salt and pepper to taste. Place on cookie sheet and cook for 35 minutes or until butterknife placed in center of pie comes out clean. Batter should not be runny. Cool 20 minutes before cutting. Batter will continue setting after removing pies from oven.

Erica's favorite. Ham can be replaced by bacon. Broccoli can be replaced by spinach or corn to create different variations of quiche. Perfect for making a head of time and microwaving for a quick meal. Enjoy!
