1# Fresh Mushrooms
6 T butter
2 c finely chopped carrots
2 c finely chopped celery
1 c finely chopped onion
1 garlic clove, finely minced
2 10oz cans condensed beef broth
3 soup cans water
3 T tomato puree
1/8 t pepper
3 T dry Sherry (optional)

Directions:
Directions:
Finely chop 1/2# mushrooms, slice the rest. Melt 4 T butter, add vegetables and saute for 5 minutes. Stir in next 5 ingredients and bring to boil. Cover, decrease heat and simmer for 1 hour. Puree soup and return to pan. Saute rest of mushrooms in 2 T butter for 5 minutes, return to soup with Sherry. Heat through and serve.
