2 tbsp. butter
3 potatoes, thinly sliced, with or without skin
3 green onions, chopped
1/2 medium bell pepper, chopped
2 c. cooked ham
6 eggs, beaten
1/2 tsp. salt
pepper to taste
3/4 c. shredded cheddar cheese

Directions:
Directions:
Melt butter in a 10 inch skillet. Layer with half of the next 4 ingredients. Sprinkle with salt and pepper; repeat layers. Cover and cook until potatoes are tender; about 20 minutes; pour eggs on top. Cover and heat until eggs are set; uncover and add cheese. Recover and heat until cheese is melted. Cut into wedges to serve.
