1 angel food cake
1/3 C sugar
1/4 C cornstarch
1/4 t salt
2 C skim milk
1/4 C egg substitute
1 t grated lemon rind
1/4 C lemon juice
2 (8 oz) cartons vanilla low fat yogurt
2 C sliced strawberries
3 Kiwifruit sliced
3 strawberry fans (for garnish)

Cut cake into cubes, set aside. Combine sugar, cornstarch and salt in saucepan. Gradually add milk, stir well, cook over med heat until thickened, stir constantly. Remove from heat, gradually add egg sub. stirring constantly with whisk. Cook 2 minutes, remove from heat. Cool slightly, stir in lemon rind & juice. Chill. Fold in yogurt to cream mixture. Layer cake and custard in large bowl making 3 layers. Arrange strawberries and kiwi around outside edge, put strawberry fans on top. Cover and chill 3-4 hours.
