1/2 cup heavy whipping cream
2 tbsp. unsalted butter
1 tbsp. white corn syrup
8 oz. semisweet - bittersweet or milk chocolate

Directions:
Directions:
Combine cream, butter, and corn syrup in a pan and bring to a simmer over low heat. Remove from heat and allow to cool for 5 minutes. Add creamed mixture to melted chocolate and whisk smooth. Cool about 2 or 3 hours at room temperature, until it reaches 80. Whip the mixture with electric mixer on medium speed for about 1 minute, until it lightens in color. Make into 3/4 inch balls and place on foil lined cookie sheets. Chill for at least 1 hour. Coat with the following recipe.
