15 oz. chopped escarole
1 tbsp olive oil
1 lg. clove garlic (peeled and minced)
1/4 c. chicken broth
1 can (15 oz.) cannelini beans (drained/rinsed)

Directions:
Directions:
1. Boil large pot of salted water.
2. Add escarole and blanch 1 minute.
3. Remove escarole. Drain and gently squeeze out extra liquid.
4. Heat large skillet over med. heat.
5. Add olive oil and garlic. Saute 1 min.
6. Add escarole, cook (stirring) 1 min.
7. Add broth and beans. Simmer (covered) 5 mins.
