2 cans (14.5 oz each) chicken broth
1 c. finely chopped onion
2 c. orzo (pasta)
3/4 lbs. boneless/skinless chicken breast (diced, uncooked)
3 c. washed, torn, packed spinach leaves
1/2 c. crumbled feta cheese (Sharp cheddar or mozzarella can be used as a substitue for the feta)

Directions:
Directions:
1. In a large skillet, heat broth and onion to boil.
2. Add orzo; reduce heat. Cover and simmer for 6 mins.
3. Add chicken; Cook 6 mins. longer (or until chicken and pasta are cooked).
4. Stir in spinach. Heat until spinach wilts.
5. Remove from heat, top with feta, and serve immediately.
