1 1/2 c. chunky salsa
1/4 minced fresh cilantro
3 Tbsp. lime juice
1 c. canned black beans, rinsed, & drained
1/2 c. corn
2 c. shredded roast beef
2 c. shredded cheese
8 flour tortillas
1 - 2 Tbsp. vegetable oil

Directions:

In a small bowl, combine the salsa, cilantro,and lime juice. In another bowl combine the beans, corn and 1/2 salsa mixture. Set remaining mixture aside. Place beef, cheese, and bean mixture on half of each tortilla, fold over. Place in skillet over medium heat, cook quesadillas in 1 Tbsp. oil for 1-2 minutes on each side or until cheese melts. Cut into wedges and serve with salsa.
