3 1/4 cups unsifted all-purpose flour
1 1/2 tsp. baking powder
1/4 tsp. salt
3/4 cup butter or margarine, softened
3/4 cup granulated sugar
3/4 powdered sugar
1/2 cup oil
2 eggs
2 tsp. grated lemon peel
2 tsp. lemon extract
granulated sugar

Mix flour, baking powder and salt in small mixing bowl. Set aside. Cream butter, granulated sugar and powdered sugar in large mixing bowl. Blend in oil, eggs, lemon peel and lemon extract. Stir in flour mixture. Cover and refrigerate about two hours. Preheat oven to 350. Shape dough into one inch balls. Place 2 to 3 inches apart on ungreased baking sheet. Flatten to 1/8 inch thickness with bottom of drinking glass, dipped in granulated sugar. Bake at 350, 10 to 12 minutes, or until edges are light golden brown. Remove cookies immediately and cool on wire rack.
